Answer for the Second Thing - joining eighth notes (or 16th's etc) - the slash "/" key is the keyboard shortcut for this toggle. If you have two 8th notes, - highlight the second one and press the slash key.

You enter them just as you would enter notes. Navigate to >Windows >Simple Entry Rests Palette - then select the rest you want to insert and click in the measure where you want the rest. If you make a mistake - just erase it with the eraser which is on the simple entry palette.
