You are correct. This is a limitation of PrintMusic. I believe (although I won't swear to it!) that the full Finale would let you create an expression that would be applied to all staves.

In PM, you could create the expression, including the text, but you would have to manually apply it each staff.

Why would you want to view an entire score at once? I would think that a long score would be reduced so much, that you wouldn't see anything but the green line moving. From the Finale Knowledge Base:

1. Go to the Document menu.
2. Click on Clefs from the list on the left.
3. Uncheck the box next to the option Display clef only on first staff system.

PrintMusic won't let you change the default spacing, but you can manually shift the notes by using the Speedy Entry carat and the mouse. Place the carat on the note, and click/hold/drag horizontally. You can create expressions in PM, but without the many options that finale has.
The easiest way would be for the poster to obtain a finale doc, which has the x-notehead as a staff style.

Are these the two staves of a Grand Staff? If so, you need to put them on separate channels.

You might be stuck with writing in the voicings, yourself.

Just as an FYI, Finale 2010 says that you can put chords anywhere in the measure, without attaching them to rests. Maybe when PrintMusic 2010 appears, you should give that a try.

You can't do any of that in NotePad. You are restricted to the percussion setup that they provide.

You need to go to the full Finale to do everything that is described: change noteheads, alter percussion maps, etc.

Depends on which program you have.
