Hello, how can I create an upstem and downstem for one note?

Hi, you actually have to create two notes, one superimposed on the other. You should enter the first note in Layer 1, and then change to layer 2 (using the little boxes 1, 2, 3, 4 at bottom left of the screen) and enter the second note. Layers 1 & 2 are set to have up and down stems by default when there is music in another layer.

You can also use the Special Tools, which has one tool for that purpose.
Click on the lower handle if the stem is pointing upwards to obtain the stem pointing downwards. See image.
