Double-click on the triplet. You will see handles to drag or adjust the number, bracket, and wings.

I can get triplets to work - they work so well the triplet jiggy wants to make everything a triplet unless I click again and tell it NO.
And to make triplets work correctly, I have to start with the note BEFORE the triplet, even going back to the previous measure (or it makes the first note a non-triplet and chaos happens). Sometimes it puts a 16th or 32nd rest at the bar line of the next measure, which will not go away unless you erase both measures totally.
In general, with dots and triplets I have to totally release all fingers from the mouse or it thinks I want to repeat previous action, or even "mass paste", a function for which I know no use at all. Can anyone explain the triplet and dot functions and why they are so sticky?

You have posted in the SongWriter (sub-)forum.
This means that you are using SongWriter?
Disclaimer:
I am not familiar with SongWriter.
1) What entry tool are you using? - Speedy Entry Tool or Simple Entry Tool?
2) I suppose that you are using the entry tool’s sub-tool Tuplet Tool (and not the Tuplet Tool on the Main Tool Palette), right?

Peter, SongWriter only has Simple Entry.
Vigzig88,
Many Simple functions are sticky, if you select them by clicking on the icon. If you want to dot a note, enter the note, and tap the . (period) key. The note will be dotted, and you move on.
Triplets work best if you don’t use the Triplet tool. Here is a link to a tutorial I wrote a few years back:
