Between measures 2 & 3 I'd like to put a dash: pon-zués
With the rest of the score I have no problems writing the dash

Select the syllable in the score or lyrics window, and retype it. That will keep the rest of the lyrics from shifting.

There's certainly a bug here--no matter what odd characters you put in your lyric, it shouldn't effect the hyphenation of the following word! Might be worth reporting, but I'm guessing it's the least of their worries and is unlikely to pass triage and be fixed.
But Mike's instructions sometimes working and sometimes not I'm more skeptical of. Here's what I did to fix this particular problem: I selected the stray characters, then used Insert Hard Space from the Text pull-down menu to replace them.

A curious thing is happening:
1) I cannot put a Dash between “san do” and between "do le" (measures 3-4). Attachment 1
2) But when I was cutting pick-up and measure 1 to incorporate the file in a more reduced way to the forum I observed that both “san-do” and"do-le" have a dash Attachment 2

Were you typing anything other than a space or a dash between the syllables?

I think he was trying to insert the elision character.
By the way, between the two versions I have, 2014.4 and 27, they've added a keystroke for the elision symbol, Ctrl+Alt+Shift+minus. Jose Oscar's bio says he's got Finale 25; I don't know if the new feature made it in by then, but if not, it might be worth upgrading if you have a lot of them to do. Should be much easier than inserting capital I's and changing their font (the Finale Lyrics font has the elision character).

The liaison problem is solved. (by the way, Ctrl+Alt+Shift+minus doesn't work on my laptop)
My problem now is with dash. Why it is sometimes not visible, but hidden.

I have Finale Lyrics with 2014.5 (indeed, it's the default). The elision character can be inserted in the Lyrics Window with Insert Symbol, but your method of using an I in the Engravers Font Set is easier, and can be done from Type Into Score as well. It can be copy and pasted.
