I'm working on a piece in 12/8 time and, for some reason, quavers are not beamed in groups of three but are all single, which means I have to spend a lot of time going back and beaming. Isn't there a way to define how Finale should be beaming?

The fastest way is to select the music and use right click (ctrl click on the Mac) to select 12/8.
Manually, you can achieve the same result in the time signature window, if you define 12/8 as 4 dotted quarter notes.

Hi Florio,
When you select your time signature you shouldn't select 12/8 but 4/dotted4, if you get what I mean. This also works with 6/8 and 9/8 by the way.
