I have a song with multiple verses. How do I add both a note and a rest on the same beat when there is a word (requiring a note) on one verse and there is no word (requiring a rest) on another verse on the same beat in the song?

That would be your choice. If there are just one or two occurences, You can do it with a reduced size note, or rest. The singer should be able to figure it out. If you have a lot of these in different places in multiple verses, though, I would write out the complete part. It uses more paper, but as a singer, I can tell you it's a lot less confusing!

Also, you can put a rest in layer 2, and move it to the appropriate height with the mouse in Speedy Entry.
Unnecessary rests in layer 2 can be hidden with the O or H key, as long as you are in the correct layer.
