I am fairly versed in Finale, but I cannot figure how to take a piano staff and make it two individual staves, like a violin and cello.
Any pointers?

The following steps work for me:
1) Selection Tool.
Click to the left of the top staff (= the right hand staff) to select the staff.
Utilities menu > Change Instrument…
Change the instrument to violin.
2) Use the same trick to change the bottom staff to cello.
3) The steps 1) and 2) above do not change the staff group.
Use the Staff Tool to edit the staff group (group name, group bracket).
