I would like to change the playback of a ritardando, but only for the place where the ritardando is in a piece, making its playback slower.
For other ritardando or in other scores I'd like to maintain its playback as default.

Are you using Human Playback in this particular Finale document?
And does Human Playback interpret the ritardandi?
Instead of using Human Playback you can also create ritardandi and accelerandi with expressions.
In the Expression Designer’s chiclet Playback there is an option to change the Tempo via an Executable Shape.

I recommend that you read about Executable Shapes in the online manual.
You may have to toggle Human Playback off for the stretch with the slower ritardando.
