I found entering notes with the mouse to be quite clunky, so I want to move to inputting notes with my laptop keyboard. I watched a video that said to enter into the "caret" entering mode, you alt-click a measure to place your cursor there. However, when I do this it always places a note where I clicked. How do I prevent this from happening? Thanks!

I assume you're talking about Simple entry and typing A B C D E F G on the keyboard, which can indeed be quite efficient. You'll probably want a keypad if you don't have one (you can get an inexpensive one that plugs into a USB port). You just click on a measure to put the cursor there--no Alt. Maybe read the manual rather than watching the video.

In Simple Entry menu, click on Simple Entry Options, and make sure "Use Simple Entry Caret" is ticked ON.
I agree: using the mouse is tedious and pernickety; using the computer keyboard can be very fast and straightforward.
