(assuming that you are using Finale and the Maestro font)

Special Tools Tool.
Click the sub-tool Note Shape Tool.
Click inside the TAB staff.
Handles appear on all noteheads in the measure.
Context-click on the handle of the TAB notehead you want to turn into an X.
In the context menu, choose "Edit...".
The dialog box Notehead Settings appears.
Click the button "Select...", and click character #192.
Click "Select".
You return to the dialog box Notehead Settings.
You may prefer to click the check box "Allow Vertical Positioning", and set the Vertical position to 0.75 Points (= 3 EVPUs = 1/8 Space = 1/16 Picas = 1/96 Inches).

Making it sound muted is a matter of using another playback sound (patch).
If you have a "muted guitar note sound" patch, you can make playback switch to that patch via an expression.

You can also make the X note not play back at all:

Speedy Entry Tool.
Press the number 0 key to exit the Speedy Entry rectangle.
Hold down the correct modifier key (Windows: Ctrl ; Mac: Option), and click inside the measure/staff.
The dialog box Edit Frame appears.

In the upper pane you can navigate through the chords in that measure/staff/layer.
The chords are numbered sequentially beginning with number 0.
In Other Words: 0, 1, 2, 3, ...
By deselecting the chord's check box "Playback" you can make the entire chord not play back.

In the lower pane you can similarly make a single chord note not play back - by deselecting the note's check box "Playback" in the lower pane.
