Window menu > Instrument List

Both staves are muted.

To “un-mute” a staff, click to remove the square in the column M (= Mute).

OK, but now I'm hearing some quantization going on. Is there a simple way to remove quantization so it just sounds the way I played it, even with inaccuracies?

In the document you attached, you are using Human Playback.

Try without Human Playback (look in the expanded Playback Controls window).

I don't understand. Wouldn't Human Playback mean zero quantization?

No, it is not that simple.
What Human Playback does, depends of the settings you choose.

Human Playback means an interpretation of the music.
If you look at Human Playback, you will see that there are many, many options.
You can choose from a range of predefined settings, and you can make your own, custom settings.
Quantization is an option in Human Playback, meaning that Human Playback interprets the written layout, and disregards the recorded data.
(The recorded data = the way you played it, even with inaccuracies).

By The Way:
You can edit the recorded data, e. g with the MIDI Tool, with the Tempo Tool, and with the plug-in
Apply Human Playback.

Have you checked Document -> Playback/Record Options ? The first 2 or 3 boxes should be checked if you want playback to sound the way you played.

All four of those boxes are checked. Playback is still getting quantized.

Did you try without Human Playback (set Human Playback to “None”)?
