Just installed the latest update (twice!), but F25 still shows version 25.2.0.79.
Did I do something wrong, or is the new version hiding somewhere?

Be sure to reboot the computer. What's in the application folder? Do a "Get Info" on the app icon.
Those are what I'd do, anyway, for starters. Maybe you need to reinstall thrice.

After restarting, etc., I was still unable to install the update. Finally, I trashed the Finale app, and tried again. I was under the impression that "updates" contained the entire app, but apparently that's no longer the case. This time, I was told that a file (instruments) was missing, and to reinstall it.
Next, I went to the MM site, and my account, and downloaded the F25.3 app complete. It worked. So evidently, the "update" is just that. But I have no idea why it didn't work.
I'm not a computer expert, by any means, but I doubt that a new user would have gone through all that. It should not have been necessary.

Are you checking the "About Finale" splashscreen, or the Finder? The Finder caches file info, so updates don't show in Get Info or Preview pane for a while.
You're right that the updater just updates an existing installation, while the full installer writes everything. It's possible that the updater didn't work because it couldn't find some/all of the relevant files. I recently deleted some component files which stopped an updater from selecting my disk as a valid target!

I was checking the About Finale splashscreen. And it showed v. 2 until I ran the complete installer. Now, it shows v. 3.
