In the attached file, I used Note Mover to clarify the distribution of hands. But I can't seem to hide the whole note rests in the middle staff. They don't disappear and when I click/H the one on the bottom staff, it hides notes as well. What am I doing wrong?

They don't hide, because they aren't real rests. Select the measures of the middle staff, and Plug Ins>Note, Beam, and Rest Editing>Change to Real Whole Rests.
Now, you can select and hide them.

These are the "default" whole rests. You need to actually enter a "real" whole rest. They will then be able to be hidden.
EDIT: Mike shows another way to get this done.

That was great! But now that I've hidden the rests, I can't seem to enter notes into meas. 6 & 7, middle system. See attached.

You only needed to hide those rests where you had the cross-staff going on. In mm. 6-7, remove the Real Whole Rests. Or, put the notes in Layer 2. You can use that plugin on a measure-by-measure basis. You don't have to do it for the entire staff.
