My question: Having created a few ossia bars, I'm wondering how to have them display properly in, say, a Bb instrument part? Do I just transpose it manually for the parts?

Did you add an extra staff, and did you hide it where not needed? - A custom staff style might do the transposition.
Or did you use the Ossia Tool?

I used the Ossia tool and created a scratch staff which I then hid
