So, I am trying to create two different time signatures: a Flute part 3/4 and the piano in 6/8. I know that I could notate it to match but would much prefer having two different meters shown.

Any suggestions?

Make the staff attribute for one of the staves "independent time signature" and you can then just use the time signature tool on each.

If it's just 3/4 against 6/8, that topic is inappropriate.
