I have Finale 25 on High Sierra and I have a rather long passage to write with triplet figures in 2/4 which are quarter-eighth figures. I've always done it by putting in three notes for the triplets and deleting the second one and changing the remaining first note to a quarter or I put eighth - quarter and change them to quarter-eighth. It works but I'm wondering if there's a quicker way. If I do the option-3 for the triplet and try starting with a quarter, it just makes all the notes quarters.

From the manual:

To enter a quarter/eighth triplet:

Choose the Speedy Entry tool icon. Click in the staff to display the Speedy edit frame.
Press OPTION+1. The Tuplet Definition dialog box appears.
Type 3 in the first text box and 2 in the second text box. From both pop-up menus, select Eighth(s).
Click OK. A 3 appears in the Speedy edit frame, indicating that you will be entering a triplet.
Using normal Speedy Entry methods, enter the quarter note, then the eighth note.

In this case you can just press Option+1 and immediate press Enter; the default is "three eighths in the space of two eighths," and that dialog in not "sticky" so it will always be set to that when you press Option+1. So you can do that quickly without thinking. Then enter the quarter and the eighth.

Well I'll be darned! I had always done my triplets starting with option-3 and then I would press 4 which indicated I wanted my triplets to be eighth notes which gave me the problem. I didn't even know the option-1 existed. That sure solved my problem and it's going to save me a lot of time! Thanks.

I'm working on a piece that is almost ENTIRELY this rhythm. I don't know much about Scripts, but is there a script or plugin that could automate this at least a little bit?

The JW plug-in is just brilliant, and probably motet's advice is the best one for you in the situation you describe, Capricorn. It works for sixteenth, eighth, and quarter triplets.

Would you need a lot of other kinds of tuplets, you could program a metatool for that. Here's from the manual:
