I'm basically just trying to create a beam that extends through the measure like in the picture. I only want it to happen in this measure, so extend beams over rests doesn't work, the "/" in speedy entry doesn't work on a rest and doesn't work when I hide a note, and the beam extension tool only extends the top beam. Any other suggestions on how this might be doable?

… the beam extension tool only extends the top beam …
While it is true that the sub-tool Beam Extension Tool by default extends only the 8th note beam, you can deviate from the default via the dialog box Beam Extension Selection:

When you are in the sub-tool Beam Extension Tool, the beams display handles.
(Drag-)select the handle where you need to extend the beams, and hit the Return key.
You get to the Beam Extension Selection where you can specify, what beams to extend.
Then, click OK, to return to the score.

To extend the beams, nudge the handle with the arrow keys, or drag the handle.

Double clicking on the handle works as well.
