Organ notation question

Where do I find the enclosing figure which tell which manual to use

It's one of the "custom" SmartShapes. Ctrl+click on the pencil icon at the bottom of the the SmartShape palette and pick the one that looks like this

The draw one of these horizontally in your document. Right-click its handle and uncheck Make Horizontal.

Now double-click on the handle and handles will appear at the endpoints. You can drag one of these around to make it vertical and lengthen or shorten it, and drag the middle handle to place it where you want.
