Been trying to find the answer for this, but I cant seem to find it - Is it possible to display a one bar rest with a pretty " 1 " number on top of it, like it would automatically do if there´s a two bar rest ?

Because a multi-measure rest is just that: a multimeasure rest. If it's only one measure long, it's a rest, not a MMR. So why would you notate it as one?
Or is this one of those "contemporary music" things?

This is not really a "contemporary music" thing, you can find these "one-bar-MMR" in many old editions. I do not really need them, but maybe some musicians find them easier to read. So why should Brian not write these MMRs when he wants to?

Brian (and everyone else) can write whatever they want.
I know that if I saw one in a score, I would have to slow down or stop, to wonder what it was about. Which, of course, is NOT the purpose of notation.

I've worked for professional publishers who have required the '1' over one bar of rest. Quite commonly seen in certain parts. I like it, personally.
