I some how forgot or can't find an easy way to add an instument to a started chart. For example, I want to do a guitar part along with the piano and bass.

Staff tool. Staff menu ->Add staff.
It will be added by default under the last one of the existing staves.
If you want to have the new staff in between the other ones, select the staff which should be right under the new staff, then add the new staff.

That's assuming you have something other than NotePad. You cannot add a staff with that program. You would have to set up a new score, and copy your music to that one.
