Eric,

It sounds like you are changing the staff attributes for that staff.

Instead you should use a staff style where you want slash notation. Note that you don't have to apply the staff style to whole measures.
If you turn on "Select Partial Measures" in the Edit menu, you can select only a part of a measure before applying the staff style.
