This is done in your sound module, NOT in Finale. You assign each note on your staff to an instrument and is done IN YOUR SOUND MODULE by layering the sounds. For instance, in an Emu 2000, you can assign your staff to any MIDI Channel, then IN THE SOUND MODULE you can assign each note to a separate instrument. If you don't have a sound module with this capability, you can achieve the same effect by putting each instrument in a different layer of the staff: ie, snare drum in layer one, cymbal in layer two etc, then assigning each layer a separate channel and instrument.
