This seems to be one of those obvious features Finale doesn't have.

The only solution I could come up with is to assign different "instrument" patches to the different staves. For instance, if you have an SATB setting, and want to bring out the soprano, try setting the soprano to, say, the "Hammond Organ" sound, with the other voices to "Choir Aahs."

(This is done through the "Instrument List" panel under the "Window" menu. But first, load in the "General MIDI" instrument library, which should be in your "Instrument Libraries" folder, and is accessed through the "Open Library" option under the "File" menu.)

Not the best solution, but it might be workable.
