Select the Staff Tool and then open the Staff menu. Select "Define Staff Styles" and the Staff Styles Dialogue box opens.
Click on New and name your staff style ........ I call mine Rhythmic Notation-stems up ( original eh??).
Now click the Select button (underneath the box marked Alternate Notation).This opens the Alternate notation dialogue where you define the style. If you select "Rhythmic notation" and tick the "Stems Up in Rhythmic Notation" box the deed is done!!!!
I am assuming you have a recent version of Finale... this option wasn't available earlier versions.
