Some of the templates that come with Finale have a tempo marking, others don't.
The Brass Band template has a tempo marking that says quarter = 108. This tempo marking is an expression, so you can delete it with the Expression Tool.
But the Piano Grand Staff template doesn't have a tempo marking.
To create Brass Band scores without a tempo marking, create a new template without the tempo marking.

To change the playback sounds to acoustic grand piano:
1. Window menu: Instrument List. The Instrument List window appears.
2. Click the radio button "View by Staves".
3. In the Instrument column, for each staff, pull down the pop up menu, and select "Acoustic Grand Piano". If you don't find "Acoustic Grand Piano" in the menu, select "New Instrument...", and define a MIDI Channel/Patch setting. You could e. g. call it "Acoustic Grand Piano", assign it to Channel 2, and select the General MIDI program 1.
