I'm afraid all you can do is turn off the playback effect in your expressions while you learn.

I'm creating piano music. When I started I had 5 double-staffs (treble + bass) per page. At some point in the middle of the piece it changed to 4 with a large white space at the bottom. I just opened up a new piece and it too has 4 staffs per page.
