The Force Hide Staff staff style is what you want, applied with the Staff tool while in the part. Select what you want to hide, but instead of picking the staff style by right-clicking, use the menu to choose Apply Staff Style To->Current Part/Score before selecting the staff style.

That seems wise of them. I'm in the business of renting out orchestra music, and can tell you things are nowhere near universal usage of tablets (quite the opposite--about 1/4 of those I polled said they would want tablet versions alone). The biggest iPad, the iPad Pro 12.9 inch, is only letter size...

Landscape mode is going to be smaller for a single page, though, since it's not as tall. Ah, very clever--a combination of staff styles and groups that only span partial measure ranges. A rather manual process that you'd have to wait until all the system breaks and staff hiding are done to employ, though.

My guess is that you've unchecked "Show on top staff." You need that, because staff numbers are suppressed in the staff settings for most instruments so they won't show up in the score.

In "suddenly stopped working" situations, the things to always try first are

1) Quit Finale and restart; if that doesn't fix it
2) Reboot your computer

Asterisk.

You're talking about shortcuts to TG Tools/Align-move dynamics, I think. On Windows, it's Alt+keypad-* to align to which ever option is set in the plug-in dialog, Alt+down-arrow to align and move down, Alt+up-arrow to align and move up. Try Option on the Mac.

I don't know what's "1990s" about it, but I suspect the reason there's no way to do that is that there's little if any call for it.

Sounds like maybe Dorico is a better compositional tool, letting you change your mind more easily. Maybe you should switch to that. They likely have a competitive upgrade. Most SmartShapes, including slurs, are applied by double-clicking and dragging. I'm sure you've put in hairpins. The slur (and a couple of others) has the additional shortcut of double-clicking to slur to the next note only, but that makes less sense for hairpins or trills.
