I clean my temp folder often, as old tmp files might be confusing Finale. You need to do this when Finale is closed. The solution I came up with was to go on the part in Page view - create the text again to be seen in that view - then hide the text on all the other parts. Forgive me, but I didn't understand the "pass 1" "pass 2 " stuff at all (I am using standard garritan/aria sounds)

I found break drum listed as an instrument but when I added it to the score as I moved across the staff it was never listed as a sound choice.
