Are these divisi-staves part of a group? Check that they are marked "optimize normally" (or what the saying is, Finale now not open).

Most likely a "guide line". Go to View - Grid/Guide - Show Guides to turn it off.

...unless you enter the "rit. - - - -" as Tempo or Tempo alteration. Then it will be in all parts. Con side is that you may need to edit the length for every part.

The Z-symbol can be found from Bravura (or its Finale-variants), free font Toccata and fonts from certain other engraving program. Or you can make you own in Shape Designer. Good font for many kinds of modern music symbols is Bravura (free), And you can get the arrow line from smart shapes; ctrl-click the last box, you get to select from many more special lines. If you need even more bizarre symbols, nice and free font is Symbola. You can Google both fonts easily.
