Quite much has happened to Finale since Finale 2003, so you've got a lot of new stuff to learn.
To solve your problem, use the new Text Insert item "Part/Score name".
You can add "Part/Score name" to the "header" text block on the first page, and to the text block with the page number.

Please be more specific: Are you using Finale 2000? Do you want to hide all the page numbers in the document, or do you only want to hide the page number on one particular page, like e. g. the page number on Page 9 so that Page 8 displays an '8', Page 9 displays no number, and Page 10 displays a '10'?
