In Finale you have to go to MIDI/Audio > Device Setup > Audio Setup… and then select the appropriate Bluetooth device rather than Built-in Output (and also remember to reverse this as an when necessary).

Zuill's suggestion will I suspect change the size of the staves themselves. If you want to keep the smaller stave size, but space them more widely, then in the Staff Tool select all except the top staves in the subsequent systems then try this. This is a wild, ill-informed guess, but have you tried the User Library? To get there click on Go in the Finder menu with the Option or Alt key depressed and then click Library > Application Support > Make Music > Finale.
