Someone will respond who is much better informed about this than me, but as far as I understand it Finale 2011 doesn't work correctly on High Sierra. ie You may need to up-date Finale to the current version to get round this.

This may set you in the right direction, although it may be a little different in Windows. On a Mac with UK keyboard you press the grave accent ` key while moving the expression. That ought to do it anyway, but it may depend on how you assigned the multi-stave expression.

I hate to be difficult, but as a performer I would strongly advise against using smaller cautionary accidentals. It makes it very easy to confuse sharps and naturals while reading, especially under less-than-ideal lighting conditions.… … Which leads indirectly to something which sometimes concerns ...

In Speedy Entry, enter two separate pitches and then drag the ‘wrong’ note up or down to the correct pitch. They ought then to show side by side. I expect there's an equivalent in Simple Entry. Elaine Gould on page 483 of her book Behind Bars recommends that piano staves are within a height range of 6.5mm to 7mm, with a maximum ‘less frequently’ used range of 6mm to 7.4mm. I think Finale's default may be 7.2mm.

Have you opened out the Playback dialogue? If not, click on the little arrow high on the left. This is how it looks for me in F 25.4 (see screenshot).

FWIW I sometimes use ‘beam to lyrics’ for recitative, but not elsewhere. Apart from anything else, this immediately separates the look of somewhat free recit. from the look of expressive legato. However, this is probably irrelevant in the world of musicals.
