How to change notepad font

In user manual there is a section that lists notepad fonts and what keystrokes to use to change to a certain font. But in what tool does this work?

I'm not sure what you mean by notepad fonts. Can you elaborate?
If you mean notaion fonts - engraved or handwritten - you can choose that option in the Setup Wizard.

Oh, it should say notehead fonts, it was autocorrected. There's a section called maestro font and I was hoping I would be able to select a single notehead and change its font.

You can use those noteheads as expressions, and place them where you want them. But I'm pretty sure that you can't work them into the notation font, in PM.
You would need the full Finale to do that.
What are you trying to do? Maybe there is a workaround?

What I actually was trying to do was to move a rhythmic note down from the middle line. Since that didn't seem to be possible I was looking for a way to change a normal notehead into a different shape, in order to make it possible to put the note where I like and yet have it look different.
