I am interested in buying finale printmusic, but I need to know if it's possible to change the MIDI percussion maps?
(for example, I don't want to have to assign a note on the percussion staff that's 3 octaves lower than the staff itself just to playback a snare drum sound.)

No, you can't change the percussion map in PM. Sorry.
You would be able to load a Finale doc with a different map, but I'm not sure if/how that would work.
