1) Once a template is chosen for a piece (e.g. handwritten lead sheet, controling fonts, etc.) can the style be changed later?
2) I'm writing solo guitar music (classical guitar style). In Print Music I'm having to use two to three layers to get the different moving parts in. But since each layer demands accounting for all four (let's say) beats, there are a lot of rests from one layer interfering with another layer. Is there a way to thin those out?

You can avoid leading rests, by launching the layer mid-measure. Also, uncheck Fill With Rests at end of Measure, in the Simple menu. Hide any others with the H key.
