Okay, very new at this so this will probably be the first of many questions. How do I tie the three dotted quarter notes? I did try and ended up with this. That would be okay for me at the moment, although not great, but how do I get rid of the last tie?

Welcome to the forum!
You need to be on the last tied note (= the note with an unwanted tie going to the right).
Then, in the entry tool’s menu, find the sub-menu with the menu item
Tie to next Note
(and memorize the keyboard shortcut shown in the sub-menu)

You have correctly tied the 3, quarter notes. 1 to 2, and 2 to 3. The tie from the third note shouldn’t be there. With that note selected (as it is in your picture) tap the T key to remove it. The T works to add a tie from one selected note to the next, or to remove one if it’s already there.
