There are several ways to enter triplets.
Here are two of them:
Are you using Simple Entry Tool or Speedy Entry Tool?
Both Simple and Speedy have a Tuplet (sub-)Tool.
1) In the Simple Entry Tool:
(entry via computer keyboard and entry caret)
4 (8th note sub-tool …)
Enter the first 8th
9 (… activating the Tuplet sub-Tool, and creating a triplet in 8ths …)
Enter the second 8th
Enter the third 8th
2) In the Speedy Entry Tool:
Position the crosshair on the desired scale step
Ctrl-3 (… a triplet is coming …)
4 (… entering the first 8th, and defining the triplet as 8ths …)
Enter the second 8th
Enter the third 8th

In addition to what Peter said, to get the "missing beat", just enter a quarter rest and hit H to make it hidden.
