I opened some old files in Finale 27, they look ok, but I would like to have them in one of my templates.

Is that possible? -- I mean, without opening a blank template, setting up the same orchestration, then copy/pasting

What version were you using with the older templates?

It's generally a good idea to update your templates every few years.

The files were made in Finale 2011.

But even in the same version, is it possible to open the same file in different templates?

A template is really just an ordinary Finale file to fill in, so no. You can instead save and load libraries of expressions, etc. Read about it here:
