How can I make only one up-beat note outside the bar, just before the song starts?

Ok, and what about if i want it in the middle of the song, just before the staff?

You can always create a "shorter" measure with a time signature that corresponds to the duration you need and then, hide that time signature.
The first step is done with the time signature tool, the second one with the measure tool : double-click on the measure, time signature->always hide.

I'm trying to also hide the complete bar, clefs and notelines for this bar but that seams tricky. Would it also be possible to show only the notes and rests for a bar? I'm trying to do this through staff styles but seams not working this way?

Create a staff style with no staff lines, clefs, etc, just notes and rests, then select the region and apply it.
