There are answers related to my question for Finale 2010, but they do not work for my Finale 26 on Windows.

I'd like to beam a bar of polyrhythmic 6/8 as if it were 3/4. For the system as a whole 6/8 is the best meter to keep players comfortable, but for one stave I want the beam over a 16th rest to appear the way Finale 26 automatically beams in 3/4 (where 16th-rest, 16th-note, 16th-rest, 16th-note would constitute eat 2 of the bar).

Is there a way to do this? It's certainly simple to do with pencil and staff paper.

I don't understand your description. Perhaps you can do it with pencil and paper and upload a picture.

Bill Steven's first answer is what I can't figure out how to do on Finale 26.3 for Windows.

I did that using Speedy Entry. I put in the rests and notes, and then put the cursor on the 16th rest in the middle and typed /

Thanks to others who provided more elegant solutions.

Or you can select the 3/4-like measure with the Selection tool, and use Utilities->Rebeam->Rebeam to time signature->3/4. Probably worth getting used to using the / key, though (works in Simple entry as well as Speedy entry).
