Most instruments can be notated on staves that play their sound in a different octave from that shown in the notation. This may not be true of the keyboard instruments in Finale. The higher pitches of a piano seem to require placing the notes on an absurd number of ledger lines because the usual functions for that are greyed out.

Is there a way to play the piano sound in a higher octave than the notation indicates?

Here is a separate issue: Is it possible to play the piano sound on one treble staff or one bass staff without the other staff being shown?

Your question is unclear.

This sounds like a playback issue.

“… without the other staff being shown …”
This sounds like a layout issue.

Layout or Playback?
Please explain.

In the Set-up Wizard or Score Manager (if you're adding a staff), pick "Blank Staff." I believe "grand piano" is the default sound, but if not, change it in the Score Manager.
