Do I need to slur both notes of the beamed eighths?

Since they're on the same stems, no (in fact, it would look bad, I think).

What instruments, Mike? Much of your stuff is vocal, so the slur above would make sense if there is only one set of lyrics. If it is divisi instruments that might be a different matter.

The less black you have on the page (without losing any information), the better.

Since there is only one stem, it is redundant to show two slurs. This is spoon-feeding the user to the extreme. Do not insult people's intelligence.
