Can somebody explain how I can create an "n" for niente in the same Maestro 24 font that all the other dynamics are? When I try to "create dynamic" I find that the 'n' key on the keyboard corresponds to a different symbol in Maestro. Thanks so much.

Type Option (Alt) N, then N.

As has been pointed out, very easy on a Mac.

The n (ñ Ñ) isn’t the only key that can modify other letters when used with the Option key on a Mac. Here’s a chart:
