Uncheck "Use Tempo Marks Category Fonts", select the note in the text sequence and use the font popup menu to redefine its font and its size.

That is known to me, but I would like to edit the dropdown menu.
Accidentals can be changed globally, but I don't see how it can be done with note values.

As Far As I Can Tell, the note insert font is the category’s Music Font.

What happens if you choose GNU FreeSerif as the category’s Music Font?
Does that give you the desired note inserts?
It might be a matter of the font having the note symbols located in the right font slots (= where a Music Font has them):
Eighth note in slot #101 (type an ‘e’),
Half note in slot #104 (type an ‘h’),
Quarter note in slot #113 (type a ‘q’),
&c.

No, the slots are somewhere about 4000, so these letters don't work.
I do it by simply creating one and than I make a duplicate of that Expression.
