I have an older mac, system 10.6.8 (Snow Leopard) and thinking of updating it to 10.11 (El Capitan). I am currently running Finale 2011 on it. Will Finale 2011 work if I update my mac to system 10.11?

I'm running Finale 2011 on El Capitan. It runs just fine with one exception—you must turn Human Playback off, otherwise Finale will crash. That might be a deal breaker for you, might not.

I never use human playback. The only way I use Finale is inputting and printing a score (mostly just piano) and playing the score back just to check for errors like wrong notes, etc. So the playback is like a sequencer playback, not human at all. Would that run OK on El Capitan (OS 10.11)?

I agree with N. Grossingink. I just tested 2011 in El Capitan once more : it works ok but without Human Playback.
