Is it possible to take a youtube soundtrack (that is only piano) and convert it to mp3 or midi and then convert it to music manuscript?

You will have to transcribe the music “manually”, by using the “wetware” between your ears.

Indeed there is software for transcribing audio into music notation, but it works best for a “one tone at a time” soundtrack, like a wind instrument solo.

Transcribing a “polyphonic” piano soundtrack is a much more difficult task for computer software, because of all the simultaneous overtones.

Anthemscore has a 30days trial and does a very good job on creating a score from mp3 or midi. Of course the result needs further work but provides a very helpful basis.
