I would like to add shortcuts to menus that are only accessible by clicks, like Transpose. How is it done?

The easiest way that I have found is to set them up in the Keyboard > Shortcuts > App Shortcuts control panel. Be sure to spell the target command exactly like it’s spelled in the program.

And no matter how careful you are, I’ve found that some of them just don’t work.

For simple shortcuts, I do what Miker suggests using System Preferences.

For the ones that don't work, if I want more logic, or I want more complicated shortcuts, I use Keyboard Maestro to create macros.

It's decently cheap and the macros I use save me hours each week. That may be overkill for what you're looking for, but worth looking into. (for Windows users, I've heard Autohotkey works well).

Also note that sometimes one has set up the ones in Mac keyboard preferences in the way I have set up Lyrics in the screenshot with -> as part of the path.

That's a good tip, but it worked directly, even for Staff List Manager, which is part of the TGTools plugin
