In Simple Entry, pull down the menu; Simple edit commands/Accidentals. You can learn the keyboard shortcuts there, too.
In Speedy Entry, press - or + twice.

Also, in Speedy with the cursor on the note you can key ‘v’ for a double flat and ‘x’ for a double sharp.

In Simple (in Windows, anyway), Shift+- is for double flat, and Shift+= is double sharp.
