In the key of Bb, trying to enter a Cb/Db slash chord. No matter what, Finale converts it to B/Db which makes me look like an idiot when people read my chart
When I look at the chord in the chord dialog box it's correct. It shows 2 with a -1 as the alteration. Any idea how to correct this?
Can't enter Cb in a chord symbol (version 25)

Another way is to uncheck "Simplify Spelling" in the Chord menu.

All I did was uncheck Simplify Spelling in the Chord Tool menu. I wonder why that didn't work for you.

If you have Capo chords in the Finale document, you may prefer that Simplify Spelling stays selected (and then use the Dbbb/Db solution).
If you de-select Simplify Spelling, you may get difficulties with the spelling of Capo chords.
If you do not have any Capo chords, then un-checking Simplify Spelling will be fine.
